Many of you have enjoyed eating game birds: pheasants, quail, turkeys, ruffed grouse and the like, in addition to ducks. You know that these birds differ dramatically — with white meat for the birds in the taxonomic group with chickens, and dark meat for waterfowl. But did you know the physiology?     I really liked this video – didn’t know they had different things in the muscle that makes it possible to fly a long ways. Myoglobin is word of the day!!
