Many of you have enjoyed eating game birds: pheasants, quail, turkeys, ruffed grouse and the like, in addition to ducks. You know that these birds differ dramatically — with white meat for the birds in the taxonomic group with chickens, and dark meat for waterfowl. But did you know the physiology?
