Dove Nuggets

Serve alone as an appetizer or atop a bowl of cilantro lime rice, grilled fajita veggies and guacamole.

¼ lb. unsalted butter, Melted

favorite Cajun seasoning


  1. Pat dove dry using paper towels
  2. Preheat cast iron griddle (or skillet) on hot grill
  3. Place dove in bowl and coat with melted butter
  4. Place a single layer of doves on a smoking hot cast iron griddle, immediately season with a shake of seasoning.
  5. Flip doves after about 30 seconds, season second side and cook for an additional 30 seconds. Do not overcook or the meat will become very chewy.
  6. Remove from heat and serve hot.
