Description:
This mallard half was first smoked and then braised inutile tender! After reducing the juices and sauces remaining from the cast iron skin, it was blended down with carrots to make the most rich sauce. The skin of the duck was crisped with a torch just prior to serving and then topped with the duck fat gravy!
